 Simon the Zealot

Simon was a member of the radical political party which had as its mission the overthrow of the Roman authorities.  He was probably attracted to Jesus initially because he thought he would be a militant Messiah.  However, the Zealot was conquered by the love of Christ and his love.  His transformed life is represented by fish which represents his reputation as a great fisher of men.  And the fish lies atop a book which stands for the Gospel he preached.
